Oven Cured Tomatoes

3 vine-ripened tomatoes, each cut into 8 wedges
1 teaspoon salt
1 teaspoon sugar
3/4 teaspoon white pepper

Place tomato wedges on a roasting rack that has been sprayed with Pam. Make sure to place the wedges skin side down. Combine the spice mix and lightly sprinkle each tomato wedge with a pinch. Place rack in a 200° oven for approximately 4–6 hours till half of the tomato moisture has evaporated. Reserve in the refrigerator until ready to use.

Lemon Herb Dressing
2 ounces lemon juice
1 teaspoon shallot, chopped
1/2 teaspoon garlic, chopped
1 teaspoon chives, chopped
1 teaspoon chervil, chopped (parsley may be substituted)
4 ounces extra virgin olive oil

Combine everything in a bowl except the oil. Slowly whisk in oil until it is incorporated. Adjust the seasoning with salt and pepper. It will be necessary to remix this vinaigrette prior to spooning over the salad. Yields one cup. Stacey Hedman
