8-10 slices of oatmeal bread
4 or 5 large leaves of green leaf or other leafy lettuce
1 large or 2 small ripe tomatoes, cored and sliced
3 large carrots, peeled and shredded
2 large kosher dill pickles, sliced thin the long way
8 or 10 thin slices of Swiss cheese
Mayonnaise to taste (it’s not Sheila’s favorite without mayonnaise!)
Spread mayonnaise on one slice of bread and add 2 slices of Swiss cheese. Layer lettuce, tomatoes, pickles and a heaping pile of carrots on the other side. Close and enjoy. Makes 4-5 sandwiches.
1 pound rotini pasta
1/4 bunch scallions, chopped
1 cucumber, peeled and diced
Pinch garlic powder
2 tablespoons apple cider vinegar
2-4 tablespoons mayonnaise
2-4 tablespoons Russian dressing
salt and pepper to taste
- Bring a pot of water to a boil. Add salt, dash of olive oil and pasta. Boil for 8-10 minutes. Drain pasta and sprinkle with celery seeds and Italian dressing. Let cool.
- While pasta is cooling, mix remaining ingredients in a bowl. Add pasta when it has cooled. Refrigerate until ready to serve.
