Terry Pommett Smoked Turkey, Tomato & Swiss on Portuguese Bread

8 to 10 slices Portuguese or sourdough bread
4 or 5 large leaves of green leaf or other leafy lettuce
1 large or 2 small ripe tomatoes, cored and sliced
1 to 1/2 pounds smoked turkey beast, sliced thin
8 to 10 thin slices of Swiss cheese
Mayonnaise
Salt and pepper to taste
Red onion, thinly sliced (optional)

Spread mayonnaise, salt and pepper and a couple slices of Swiss cheese on one slice of bread.  Layer lettuce, turkey and tomatoes on the other side.  Close and enjoy. Makes 4-5 sandwiches.

Peanut Butter Crunch Cookies

1 stick butter, softened
1/2 cup peanut butter (crunchy or smooth)
1/4 cup white sugar
1 cup brown sugar
1/2 tablespoon vanilla
1 egg
1 cup course or stone ground whole-wheat flour
2 pinches of salt
1 cup wheat flakes
1/2 tablespoon baking powder

  1. Preheat oven to 325°.
  2. Cream butter, peanut butter, sugars and vanilla. Add egg and mix slightly. Combine dry ingredients and mix. Mix all ingredients until incorporated. Scoop evenly spaced onto a cookie sheet and bake for approximately 20 minutes, as you would Tollhouse cookies. Time will vary based on the size of the cookie and your oven temperature.
  3. Yields about 2 dozen small cookies.
