Brewster oysters are gaining a local reputation for their plump texture and sweetness. A small band of oystermen, who are part of a volunteer aquaculture program, sell their catch to local restaurants, markets, and even on the Brewster Flats. This program is supported by the sales of T-shirts and caps from growers on the flats and through the Town Hall or brewsteroyster.com. The website also explains how the oysters are harvested and lists where you can buy the oysters wholesale, retail, and at restaurants.
