Apple & Fennel Slaw

Recipe is from the Dan'l Webster Inn in Sandwich.


  • 2 Gala apples
  • 1 fennel bulb
  • 1 ounce olive oil
  • 1/2 teaspoon Kosher salt
  • 1 dash cayenne pepper


1. Remove core from apples and fennel and discard.

2. Cut each into 1⁄₈” to ¼” thick slices. Stack slices on top of each other and slice 1⁄₈” to ¼” cuts out of each stack to make thin strips.

3. Transfer to mixing bowl and add remaining ingredients.

4. Mix gently until well incorporated. Serve immediately.
