Banana Loaf Bread

Ingredients
- 3 bananas
- 3 tablespoons brown sugar
- 1 cup vegetable oil
- 1 ¼ cups sugar
- 3 eggs
- 1 ¾ cups all-purpose flour
- 1 ¾ teaspoons baking soda
- ½ tablespoon vanilla extract
- 4 tablespoons sour cream
- ½ cup cranberries, either fresh or dried
- 1 pinch cinnamon
- 1 pinch salt
Directions
- Preheat oven to 340°. Grease and flour two loaf pans (4” x 8”).
- Mash bananas and brown sugar together. Add oil, sugar, eggs and vanilla. Mix in dry ingredients and then add sour cream and cranberries. Place approximately 2 ½ inches of mixture in each loaf pan. (Muffin pans may also be used.)
- Bake in oven until browned and cooked in the center.
