Banana Loaf Bread

Ingredients

  • 3 bananas
  • 3 tablespoons brown sugar
  • 1 cup vegetable oil
  • 1 ¼ cups sugar
  • 3 eggs
  • 1 ¾ cups all-purpose flour
  • 1 ¾ teaspoons baking soda
  • ½ tablespoon vanilla extract
  • 4 tablespoons sour cream
  • ½ cup cranberries,  either fresh or dried
  • 1 pinch cinnamon
  • 1 pinch salt

Directions

  1.  Preheat oven to 340°. Grease and flour two loaf pans (4” x 8”).
  2. Mash bananas and brown sugar together. Add oil, sugar, eggs and vanilla. Mix in dry ingredients and then add sour cream and cranberries. Place approximately 2 ½ inches of mixture in each loaf pan. (Muffin pans may also be used.)
  3. Bake in oven until browned and cooked in the center.
