- 2 cups ripe mango, diced
- ¼ cup golden raisins
- 2 tablespoons orange juice
- 2 tablespoons fresh parsley, chopped
- ½ cup scallions, chopped
- 2 tablespoons mild curry paste
- Combine all ingredients and refrigerate. For best flavor allow to come to room temperature before serving.
