French Crème Chantilly

Ingredients
- 2 cups heavy cream
- 1/2 cup confectioners’ sugar, or to taste
- 1 teaspoon vanilla
Directions
- Pour all ingredients into a well-chilled metal mixing bowl.
- Begin beating at low speed. As the mixture begins to thicken, gradually increase speed. Beat until cream is very, very thick, almost to the point where it would separate into butter and buttermilk and retains its shape even when transferred to another bowl. Refrigerate until needed.
