Goodin’ Puddin’ and Goodin’ Puddin’ Pie

Ingredients

  • 2 teaspoons cooking oil or butter
  • 1 full cup cranberries
  • ¼ cup sugar
  • ¼ cup nuts, coarsely chopped
  • ½ cup sugar
  • ¼ cup melted butter
  • 1 egg
  • ½ cup flour

Directions

  1. Preheat oven to 325 degrees.
  2. Grease as 8 x 4 x 4-inch loaf pan with the 2 teaspoons cooking oil or melted butter.
  3. Add cranberries, ¼ cup sugar, and nuts to loaf pan.
  4. Beat ½ cup sugar, ¼ cup melted butter and egg until smooth. Fold in flour and pour mixture over berries.
  5. Bake for 45 minutes.
You may double the recipe and bake in a deep-dish plate, for 6-8 servings.
