Grilled Chicken Breasts with Yogurt Marinade

Ingredients
- 6 boneless chicken breasts
- 1 cup plain yogurt
- 1 teaspoon cumin
- ½ teaspoon red pepper flakes
- 2 teaspoons roasted garlic
- 1 scallion, minced
- 1 teaspoon paprika
- 1 tablespoon lemon juice
- Curried mango relish
- Fresh fruit salsa
Directions
- To roast garlic, peel ½ cup of garlic cloves. Place in a small baking dish with one tablespoon of olive oil and bake at 350° for 30 minutes.
- In medium size mixing bowl, combine all ingredients except chicken breasts. Add chicken breasts and mix well. Refrigerate 3-4 hours.
- Heat grill and brush marinade from chicken. Grill until 175° internal temperature, about 4 minutes per side. Serve with curried mango relish and fresh fruit salsa.
