Grilled Chicken Breasts with Yogurt Marinade

  • 6 boneless chicken breasts
  • 1 cup plain yogurt
  • 1 teaspoon cumin
  • ½ teaspoon red pepper flakes
  • 2 teaspoons roasted garlic
  • 1 scallion, minced
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • Curried mango relish
  • Fresh fruit salsa


  1. To roast garlic, peel ½ cup of garlic cloves. Place in a small baking dish with one tablespoon of olive oil and bake at 350° for 30 minutes.
  2.  In medium size mixing bowl, combine all ingredients except chicken breasts. Add chicken breasts and mix well. Refrigerate 3-4 hours.
  3.  Heat grill and brush marinade from chicken. Grill until 175° internal temperature, about 4 minutes per side. Serve with curried mango relish and fresh fruit salsa.
