This recipe is from the Cape Cod Cookie Company at 569 Main Street, Hyannis.

  • 1 ½ cups chocolate chips
  • ¼ cup vegetable shortening
  • 3 eggs
  • ¾ cup white sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup of flour
  • marshmallows

  1. Preheat oven to 350° F.
  2.  Melt chocolate chips and shortening over a double boiler or in the microwave.
  3.  Using a mixer, combine with the eggs, sugar, and vanilla until smooth texture is achieved. Add melted chocolate to the egg mixture with the mixer on low speed. Add flour, salt, and baking soda.
  4. Chill mixture for approximately one hour. Hand-form dough into two-inch rounds and place on parchment-lined baking sheets. Bake for roughly 15 minutes until slightly firm and crackles form on top. Remove from oven and top with three to four mini-marshmallows or half of a regular-size marshmallow. Return to oven and bake for one to two minutes. Transfer to a cooling rack.
