Peanut Butter Crunch Cookies

Ingredients
- 1 stick butter, softened
- ½ cup peanut butter (crunchy or smooth)
- ¼ cup white sugar
- 1 cup brown sugar
- ½ tablespoon vanilla
- 1 egg
- 1 cup course or stone ground whole-wheat flour
- 2 pinches of salt
- 1 cup wheat flakes
- ½ tablespoon baking powder
Directions
- Preheat oven to 325°.
- Cream butter, peanut butter, sugars and vanilla. Add egg and mix slightly. Combine dry ingredients and mix. Mix all ingredients until incorporated.
- Scoop evenly spaced onto a cookie sheet and bake for approximately 20 minutes, as you would Tollhouse cookies. Time will vary based on the size of the cookie and your oven temperature.
