Peanut Butter Crunch Cookies

  • 1 stick butter, softened
  • ½ cup peanut butter (crunchy or smooth)
  • ¼ cup white sugar
  • 1 cup brown sugar
  • ½ tablespoon vanilla
  • 1 egg
  • 1 cup course or stone ground whole-wheat flour
  • 2 pinches of salt
  • 1 cup wheat flakes
  • ½ tablespoon baking powder


  1. Preheat oven to 325°.
  2. Cream butter, peanut butter, sugars and vanilla. Add egg and mix slightly. Combine dry ingredients and mix. Mix all ingredients until incorporated.
  3.  Scoop evenly spaced onto a cookie sheet and bake for approximately 20 minutes, as you would Tollhouse cookies. Time will vary based on the size of the cookie and your oven temperature.
