Sesame Crusted Salmon with Soy Ginger Glaze

Ingredients

  • 1 cup Panko breadcrumbs
  • 1 tablespoon black sesame seeds
  • 1 tablespoon white sesame seeds
  • 1 tablespoon paprika
  • crushed red pepper to taste
  • ½ cup sesame oil
  • 3 tablespoon vegetable oil
  • 2  fresh salmon fillets, 8 ounces each

For the soy-ginger glaze:

  • 2 -3 tablespoons vegetable oil
  • 2 -3 slices fresh ginger, minced
  • 1 garlic clove, minced
  • 1 small shallot, minced
  • ¼ cup rice wine vinegar
  • 1 cup soy sauce or tamari
  • ½ cup sugar

Directions

  1. In a large bowl mix the breadcrumbs with the sesame seeds, paprika and crushed red pepper. Add the sesame oil and blend to coat the breadcrumbs. Set aside.
  2. Make the glaze: Heat a saucepan over medium heat and add the vegetable oil. Add the ginger, garlic and shallot and sauté briefly to release the flavors. Add the vinegar to deglaze the pan. Add the soy sauce and sugar and stir to blend. Cook the sauce down until it is reduced by half.
  3. Heat a large sauté pan over medium high heat. Add the vegetable oil. Evenly coat the salmon fillets with the breadcrumbs mixture and add to the hot oil, skin side down. Cook until golden, about two to three minutes per side. Continue cooking in a preheated 425˚℉oven until desired doneness, about 5 minutes.  The salmon is best when cooked medium, with a bit of pink inside.
  4. Serve with steamed baby bok choy and white jasmine or basmati rice. Drizzle with the soy-ginger glaze.
