Strawberry Tart

Recipe provided by the Coonamessett Inn, 311 Gifford Street, Falmouth.


Pastry Cream

  • 2 cups milk
  • 2 ounces unsalted butter
  • 4 ounces sugar
  • 3 tablespoons cornstarch
  • 2 eggs

Graham Cracker Crust



  1. Boil milk. Mix eggs, sugar and cornstarch together. Temper egg mixture with hot milk, stirring constantly, and bring to a simmer. Whisk in cold butter.
  2. Refrigerate three hours.
  3. Spoon cold pastry cream into prepared tart crust and arrange sliced berries on top.
  4. Serve with fresh whipped cream.
