1/2cupSweet potatoes, baked and peeledbaked & peeled
1/2cupCider vinegar
1tbspHoney
1pinchGinger powder
1pinchSalt & Pepper
1/2cupExtra virgin olive oil
Instructions
Salad:
In a bowl, combine greens, berries, and half of the cheese. Toss with desired amount of vinaigrette and move to a platter. Garnish with walnuts and remaining cheese.
Sweet Potato Vinaigrette:
In a mixing bowl, mash sweet potatoes with a stiff whisk. Add vinegar, seasonings, and honey. Combine. Whisk in olive oil and adjust seasonings if needed.
