Dennis Port Delights

2022 Holiday Cookie Contest Winner

Ingredients

  • 1 ¼ cups butter (salted), softened
  • ¾ cup firmly packed brown sugar
  • ½ cup granulated sugar
  • 1 large brown egg
  • 1 tsp vanilla
  • 1 ½ cups 1:1 gluten free flour (e.g. Bob's Red Mill Gluten Free 1:1 Baking Flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 3 cups quick or old fashioned uncooked rolled oats (e.g. Bob's Red Mill Old Fashioned Rolled Oats)
  • 1 cup dried cranberries
  • 1 ½ cups white chocolate chips
  • 1 cup raw sliced almonds (not silvered, need shaved/sliced)
  • 1 cup unsweetened shredded coconut (shredded or flakes—Bob's Red Mill Unsweetened Shredded Coconut)

Instructions

  • Heat oven to 375ºF. 
  • In a large bowl, beat butter and sugars (white & brown) until creamy. Add egg and vanilla. Then, beat well.
  • In a separate bowl, combine gluten free flour, baking soda, cinnamon, nutmeg, salt. Add the combined dry ingredients into the large bowl with the wet ingredients. Mix all together well.
  • Add oats. Mix well. Add white chocolate chips, dried cranberries, sliced almonds, and shredded coconut. Mix together gently until well combined.
  • Drop dough by rounded tablespoon onto parchment paper on ungreased cookie sheet. Uniform pattern with some separation between dough drops. Make sure there’s a white chocolate chip, cranberry, and coconut visible in each drop!
  • Bake for about 8-9 minutes (depending on oven) for a chewy cookie. 
  • Let cool for at least 2 minutes, can then be removed to separate plate or wire rack to cool completely. 
  • Store tightly covered. 

Notes

*These cookies were made gluten free by using gluten free flour but this can be substituted with all-purpose flour (same amount). With gluten free flour, it’s important to make sure there is xanthan gum already mixed into the flour. If any nut allergies, almonds can be exchanged with another nut (raw crushed walnuts or crushed cashews) or removed from
recipe as well.
