Holiday Linzer Cookies

The Linzer cookie originates from Austria, inspired by the Linzer Torte. Consisting of two shortbread-like cookies that sandwich a jam filling. A holiday staple in Natasha’s kitchen, enjoy her recipe!

Servings: 24 sandwiched cookies

Ingredients

  • 1 cup butter room temp
  • 1/2 cup Sugar
  • 3 Tb light brown sugar
  • 1/4 tsp cinnamon
  • 2 tsp vanilla
  • 2 cups all purpose Flour
  • 2/3 cup almond flour
  • 1 Tb cornstarch
  • 1/2 tsp salt
  • 1/3 cup jam
  • Confectioner’s sugar for dusting and design

Instructions

  • In a bowl, combine dry ingredients with a whisk and set aside. Using a stand or hand mixer, cream butter, sugar and cinnamon until light and fluffy. Add vanilla, mix and then gradually add the dry ingredients until just incorporated. Do not overmix.
  • Roll onto a floured surface and then cut into identical shapes and place on a tray lined with parchment. Remove the centers with a cutout of half of the cookies on the tray, carefully not shifting the shape of the cookie. These will be the top portion of your sandwiched Linzers. Chill the tray in the freezer for 5-10 minutes and then bake at 350 for 10 minutes or until golden brown. Cool the cookies and then sandwich with jam and dust with confectioner’s sugar.
