Baked Clams Oreganata

Ingredients

  • 2 dozen clams little necks or top necks are best
  • 2-3 cups homemade breadcrumbs see below
  • 1/3 cup extra virgin olive oil
  • 2 lemons sliced into wedges for garnish

For the Breadcrumbs:

  • 1 loaf fresh Italian Bread crust separated from the interior of the bread
  • 1 bunch basil finely chopped
  • 1 bunch thyme finely chopped
  • 1 bunch oregano finely chopped

Instructions

  • Preheat oven to 400°F.
  • Shuck the clams. If using littlenecks, leave whole. If using larger top necks or cherrystones, chop the meat into ½" pieces with kitchen scissors.
  • Arrange approximately half of the empty clam shell halves on a baking sheet and fill with the chopped clam meat. Use extra shells to wedge under the shells to keep level and keep juices from running out.
  • Generously cover the clam meat with the breadcrumb mixture, about 1-2 TBS per clam.
  • Lightly coat the breadcrumbs with olive oil.
  • Bake for 15 minutes or until the breadcrumbs start to toast.
  • Serve with lemon wedges and spoons.

For the Breadcrumbs:

  • Blend bread in a food processor, blending the crust and interior in separate batches to get a coarse, even grind. Place in a large bowl or resealable bag.
  • Add all the herbs to the breadcrumbs and mix thoroughly.
  • Chef Tip: Breadcrumbs keep well in the freezer for 2-3 months in an airtight container.
