Dried Berry Salad

Ingredients
Salad:
- 1/2 pound Mesclun greens toasted
- 1/2 cup Dried cranberries
- 1/2 cup Dried tart cherries
- 1-1/4 cups Manchego cheese shredded
- 1-1/2 cup Walnut - halves
- 1-1/2 cups Sweet potato vinaigrette
Sweet Potato Vinaigrette:
- 1/2 cup Sweet potatoes, baked and peeled baked & peeled
- 1/2 cup Cider vinegar
- 1 tbsp Honey
- 1 pinch Ginger powder
- 1 pinch Salt & Pepper
- 1/2 cup Extra virgin olive oil
Instructions
Salad:
- In a bowl, combine greens, berries, and half of the cheese. Toss with desired amount of vinaigrette and move to a platter. Garnish with walnuts and remaining cheese.
Sweet Potato Vinaigrette:
- In a mixing bowl, mash sweet potatoes with a stiff whisk. Add vinegar, seasonings, and honey. Combine. Whisk in olive oil and adjust seasonings if needed.
