Pour melted butter into a casserole dish. Place scallops evenly over butter. Top with Ritz crackers.
Bake in oven until scallops are firm, and the butter should be sizzling and the tops just slightly brown, about 20 minutes.
Laura Taylor, our Upper Cape Sales manager, likes to prepare a Cape Cod dinner for guests visiting from out of town. She serves stuffed quahogs, clam chowder and baked scallops. Laura says the quahogs and chowder can be purchased from the fish market, and the baked scallops take almost no time to prepare.
