- 12 tbsp Butter
- 1 cup Sugar plus more for rolling
- 1/4 cup Molasses
- 1 Egg
- 2 cups Flour
- 2 tsp Baking Soda
- 1/4 tsp Salt
- 1 tsp Cinnamon
- 1 tbsp Crystalized ginger chopped into small piece
- 1-1/2 tsp Ground cloves
- 1-1/2 tsp Ground ginger
- Preheat oven to 325°.
- Cream butter, sugar, and molasses until light and fluffy. Add the egg and incorporate. Sift the dry ingredients and spices. Add to the mixture and stir until combined.
- Chill dough until firm. Roll dough into balls and then roll in sugar. Bake on a parchment-lined cookie sheet until firm in the center.
