Ingredients
- 1 cup Water
- 8 tsp Unsalted Butter cut into 8 pieces
- 1 tsp Salt
- 1 cup King Arthur flour
- 2 tbsp Dried herbs
- 1/2 cup Grated Gruyere cheese or sharp cheddar or Swiss cheese
- 4 Eggs
Instructions
- Preheat oven to 425°.
- Bring water, salt and butter to a boil. Pour flour in all at once and remove from heat. Stir flour in rapidly until a mass forms, add herbs. Return to heat, continue stirring until a very thin film covers the bottom of the pan. Remove from heat, allow to cool slightly and add the cheese. Add eggs one at a time (this is important) and mix thoroughly.
- Using a pastry bag, pipe onto a parchment covered baking sheet. Bake for 12 - 15 minutes. Cool on rack.
