Oatmeal Cookies
Ingredients
- 1/2 lb. Butter softened
- 1-1/2 cups Light brown sugar
- 1-1/4 cups Sugar
- 3 Eggs
- 2 tbsp Molasses
- 1-1/2 tsp Vanilla Extract
- 1-3/4 cups all-purpose flour
- 1-1/2 tsp Salt
- 1/4 tsp Baking Soda
- 1 tbsp Baking Powder
- 1-1/2 tsp Cinnamon
- 1-1/2 cups Raisins
- 3 cups Unbleached flour
Instructions
- Preheat oven to 375° F.
- Thoroughly combine flour, salt, baking soda, baking powder, and cinnamon. Set aside.
- Blend together butter and sugars. Quickly add eggs, molasses, and vanilla. Combine the flour and egg mixtures. Add oats and raisins. Scoop dough with a small cookie or ice cream scoop into balls. Chill dough balls well.
- Bake for eight to 12 minutes depending on the size of the cookies. (Chocolate chips may be substituted for raisins.)
