One of Chatham’s most luxurious hotels and resorts has become a whole lot greener. With their farm located on Route 6A in Brewster, Chatham Bars Inn (CBI) brings homegrown greens and veggies straight from the garden into their kitchens. Executive Chef Anthony Cole works closely with farm manager Joshua Schiff to create a menu that utilizes the freshest produce and pays homage to the agricultural history of Cape Cod. 

Products from the farm make their way around CBI, whether they’re used in dishes, cocktails or even spa products. “To be a chef and to work at Chatham Bars Inn, have the Chatham Fish Pier directly at the end of our property so we can work with local fishermen and oyster growers, and then be able to come here to the farm—I know my product and I know the people who grow it, the people who catch it and those who procure it,” says Chef Cole about feeling connected to the dishes he creates. 

With a focus on innovation, the farm looks for new ways to use their produce. Schiff explains how produce like marigold foliage can be used through its different stages. While still growing, it’s added to dishes for its unique aroma and citrus flavor. When full grown, the flowers are used as garnish. “My chefs can email Josh while they’re closing up dinner at 11:30 at night and he has what they need there the next day at 10 a.m.—that’s just so rewarding,” says Cole. “We’re prepping that and it’s on your plate for either lunch or dinner that same day.”

Live trays of micro greens are driven directly from the farm to the kitchens at CBI, where chefs are then able to cut and pick the plants as they need, ensuring peak freshness. “Live trays are really the foundation of our year-round production here,” says Schiff. “It’s exciting; they provide garnishes with a little more substance and a little more flavor than people are used to.”

For those who want to really enjoy being a part of the farm and all of the incredible ingredients that CBI produces, the farm will be hosting three public farm-to-table dinners right in the middle of the fields. Guests can dine family style at one long table while the sun sets over the greenhouses. For those who can’t make it, but still want to experience the farm’s exceptional produce, CBI is excited to announce that this summer will see their first-ever farm stand right on the property.
