Pig Candy with Sweet Potato Chipotle Sauce from Quicks Hole Tavern

Ingredients

Pig Candy

  • 1-1/2 lbs Smoked pork belly
  • 1 cup Maple syrup
  • 2 cups Brown Sugar
  • 2 tbsp Ground cinnamon
  • 2 tsp Red Pepper Flakes
  • 1/4 tsp Cayenne pepper
  • 1/4 tsp Black Pepper

Sweet Potato Chipotle Sauce

  • 1 medium Sweet potato peeled & diced
  • 2 cups Water
  • 1/4 Chipotle pepper in adobo sauce
  • 1/2 cup Brown Sugar
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

Pig Candy

  • Preheat oven to 350°. Spray a sheet with cooking spray and cover with foil. Place wire rack in pan and spray with cooking spray.
  • Cut pork belly into 3-inch slices and ¼ inch thick. Place maple syrup in a bowl. In a separate bowl, mix together the brown sugar and spices. One at a time, dip pork belly into maple syrup and then into brown sugar mixture. Place on rack and continue dipping each piece and placing on rack without touching each other. (They will stick together when cooking.)
  • Bake for 20 minutes or until pork belly is nicely caramelized. Cool 10 to 15 minutes.

Sweet Potato Chipotle Sauce

  • Place potato and water in a saucepan and bring to a boil. Reduce heat to a simmer and cook until potato is soft. Reserve water. Place potato and all ingredients in a blender or food processor and blend. Add reserved water as necessary to make a smooth puree.

To plate

  • Drizzle chipotle sauce on plate, artfully arrange the pork candy on sauce and garnish with micro greens.
