Tropical Mango & Banana Muffins

Tropical Mango & Banana Muffins

Servings: 24 muffins


  • 1 cup Butter
  • 2 cups Sugar
  • 3 Eggs
  • 2 cups Bananas mashed (3-4 bananas)
  • 4 cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 2 cups Mangoes chopped


  • Preheat oven to 350°. Mix together butter and sugar until creamy using a stand mixer or hand mixer. Add eggs, bananas, and mangoes, until well mixed. In a separate bowl combine flour, baking soda, salt, and cinnamon. Slowly add flour mixture to wet ingredients and mix. Use muffin liners or baking spray on muffin pans. Fill each muffin tin with an ice cream scoop of batter. Bake 27 to 30 minutes. Makes 24 muffins.
